Crispy wok-fried vegetables with quinoa
Did you know that according to dietary recommendations, you need to eat at least 5 servings of vegetables per day? Some of this amount can be eaten raw, and some can be cooked? One serving is about 100 g of vegetables.
Today’s recipe will make your life easier; we will share a recipe for a delicious vegetable wok that you can cook in large quantities and then take with you to work or school. Eating enough vegetables is good for you because that way your body gets enough fibre, vitamins, minerals, and other essential bioactive compounds. At the same time, vegetables provide relatively little energy, so eating enough of them helps control weight. Be sure to follow the “plate rule” at every main meal to keep you feeling full longer!
INGREDIENTS:
- A small sector of cabbage
- 2 carrots
- 1 bell pepper
- 1 red onion
- 3 garlic cloves
- a quarter of a chilli pod
- parsley
- extra virgin olive oil
- pink Himalayan salt
- To serve: 1 dl cooked quinoa
METHOD:
Thinly slice cabbage, carrots and bell peppers. Chop the onion, garlic and chilli pepper and fry them in a wok with oil. Add carrots, bell peppers and cabbage. Stir constantly and cook until vegetables are crispy enough. Add salt and chopped parsley. Mix with cooked quinoa. Serve wok with your favourite source of protein – fish, chicken, legumes, meat, etc. Let’s stay active and eat healthy!
